Baked Chicken Bruschetta

Description

Juicy, oven baked chicken topped with fresh, homemade bruschetta is a delicious dinner idea. This recipe is ready in about 30 minutes and can easily meal prepped!


Ingredients

Baked Chicken

  • 5 chicken breasts (boneless and skinless)
  • 1 tbsp olive oil
  • 2 tsp Italian seasoning
  • salt & pepper
  • 5 slices of mozzarella cheese

Bruschetta

  • 4 large roma tomatoes, diced
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 4 large leaves of fresh basil, sliced
  • salt and pepper to taste

Instructions

  1. Preheat oven to 375°F.
  2. Rub both sides of the chicken breasts with olive oil, Italian seasoning, salt and pepper. Place chicken breasts in baking dish.
  3. Bake chicken for 12 minutes. Flip chicken over and place in oven for another 12 minutes. Top each chicken breast with mozzarella cheese for the last 3-5 minutes of cooking (ensure chicken reaches an internal temperature of 165°F, cooking time may vary depending on the size of your chicken breasts). 
  4. Place all bruschetta ingredients in a medium size bowl and mix together. 
  5. Plate chicken and top with bruschetta when ready to eat.

Notes

  • Meal prep tip: Store the cooked chicken breasts separate from the bruschetta until ready to eat.
