Description
Juicy, oven baked chicken topped with fresh, homemade bruschetta is a delicious dinner idea. This recipe is ready in about 30 minutes and can easily meal prepped!

Baked Chicken
- 5 chicken breasts (boneless and skinless)
- 1 tbsp olive oil
- 2 tsp Italian seasoning
- salt & pepper
- 5 slices of mozzarella cheese
Bruschetta
- 4 large roma tomatoes, diced
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 tbsp balsamic vinegar
- 4 large leaves of fresh basil, sliced
- salt and pepper to taste
Instructions
- Preheat oven to 375°F.
- Rub both sides of the chicken breasts with olive oil, Italian seasoning, salt and pepper. Place chicken breasts in baking dish.
- Bake chicken for 12 minutes. Flip chicken over and place in oven for another 12 minutes. Top each chicken breast with mozzarella cheese for the last 3-5 minutes of cooking (ensure chicken reaches an internal temperature of 165°F, cooking time may vary depending on the size of your chicken breasts).
- Place all bruschetta ingredients in a medium size bowl and mix together.
- Plate chicken and top with bruschetta when ready to eat.
