Devilled eggs are a popular appetizer, that are traditionally made using mayonnaise. In this mediterranean inspired recipe, we are swapping the mayo for Tzatziki dressing. Tzatziki is a traditional Greek dressing that has a tangy flavour and is made with a yogurt base and a few simple ingredients.
Ingredients
- Hard-boiled eggs: easily make on the stove top or Instant Pot. These can be made a couple days in advance.
- Tzatziki dressing: homemade Tzatziki can be made in 15 minutes! Most grocery stores also sell pre-made Tzatziki dressing. Easily make this recipe dairy-free by making Tzatziki with coconut yogurt.
- Red onion: finely chopped
- Capers: adds a salty taste to the recipe.
- Parsley: gives this recipe a fresh taste and beautiful colour!
How to make Mediterranean Devilled Eggs
- Slice hard-boiled eggs in half, lengthwise.
- With a small spoon, scoop out the egg yolks and place in a small bowl. Use a fork to mash the egg yolks into a fine crumble. Then add the Tzatziki dressing and mix well. If the mixture is a bit thick, add about 1 tsp of water and mix. This will thin out the mixture slightly.
- Feel free to scoop the egg yolk/Tzatziki mixture with a spoon into the egg whites. Or if you want them to look REALLY nice, add the mixture to a piping bag. If you don’t have a piping bag, cut the tip of a ziplock bag, add a metal piping tip and then fill the plastic bag with the mixture. Pipe the inside of the egg whites with the yolk mixture.
- Top with red onions, capers and parsley.
- Serve immediately and enjoy!
