My first post of 2019 is a super simple egg bite recipe! I love egg bite recipes because they can easily be made ahead of time, stored in the freezer then reheated for a quick and healthy breakfast. There are so many egg bite recipe out there however this is my personal favourite as it is dairy-free and contains minimal ingredients. Feel free to add more vegetables to this recipe!
There is 12 eggs in this recipe, which should make 12 egg bites (using regular size muffin pan). One egg contains approximately 6g of protein, 5g of fat and 50% of your daily requirement of Vitamin B12. When I eat these for breakfast I normally have 2 of them with about 1/2-1 cup of fruit. The fruit adds fibre and antioxidants, which is also important in the morning!

Ingredients
- 12 eggs
- 1 tsp garlic powder
- salt & pepper
- 5 slices of turkey bacon, cooked and chopped
- 3 tbsp fresh parsley, chopped
Instructions
- Preheat oven to 350 degrees F.
- Whisk together eggs garlic powder, salt and pepper.
- Mix in cooked turkey bacon and parsley.
- Spray muffin tin with cooking spray (important!!). Scoop 1/4 cup of the mixture into regular size muffin tin. Place in oven for about 12 minutes.
- Remove from oven, eat right away or let cool and place in freezer (in freezer bag). Reheat in microwave when ready to eat.
Notes
- Spray muffin tin with cooking oil spray or grease. This will help egg bites from sticking to the pan.

Looks amazingly easy to make and delicious to eat. Is the pan you use a non stick? my last attempt of making a similar recipe was that they all stuck to the pan…. any tricks / suggestions? I would really like to make some for easy grab and go meals. Thank you

Hi Aline, yes try using the non stick spray before adding the mixture to the muffin pans and they shouldn’t stick. Hopefully that works – let me know how they turn out!

They were a little runny in the middle so I would recommend 325 for 15-16 min.
