Description
These mediterranean devilled eggs are made with a fresh and tangy Tzatziki dressing. It’s a great snack idea or appetizer that can be ready in under 30 minutes!
Ingredients

- 12 hard-boiled eggs, peeled
- 1/3 cup Tzatziki (homemade or store-bought)
Toppings
- 3 tbsp red onion, finely chopped
- 2 tbsp capers
- 1 tbsp parsley, finely chopped
Instructions
- Slice hard-boiled eggs in half lengthwise.
- With a small spoon, scoop out the egg yolks and place in a small bowl. Using a fork, mash the egg yolks into a fine crumble. Add Tzatziki and mix well.*
- Add the egg yolk mixture to a piping bag. Pipe the inside of the egg whites with the yolk mixture.
- Top with red onions, capers and parsley.
Notes
*Depending on the Tzatziki recipe you use, the water content will vary. Therefore, if your mixture is thick, add water, starting with 1 tsp.
