Low Carb Turkey Meatballs

Description

This low carb turkey meatball recipe is a go-to favourite of mine because it’s quick to make and super flavourful. This recipe is made with minimal ingredients and ready in about 30 minutes!


Ingredients

Scale
  • 1 lb. ground turkey
  • 1/2 cup almond flour
  • 1/2 cup ricotta cheese, crumbled
  • 1/2 cup fresh parsley, chopped (plus more for topping)
  • 1 egg
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper

Serve in marinara sauce (Rao’s is a great low carb option).

Top with more fresh parsley and parmesan cheese.


Instructions

  1. Preheat oven to 400°F and line a baking sheet with parchment paper.
  2. Add meatball ingredients to a large bowl and mix with clean hands until combined.
  3. Roll into balls (I use a medium size cookie scoop for same size meatballs). Place on baking sheet.
  4. Bake for 20-25 minutes or until fully cooked.
  5. Heat marinara sauce in large pan, once meatballs are done, place in pan with sauce and coat. Serve with parmesan cheese and parsley.
