Apple Crisp Overnight Oats

Description

Soft apples and warm spices overtop of overnight oats is a delicious way to start the morning! This recipe is made with simple ingredients and great for meal prep. 


Ingredients

Overnight Oats Base

  • 1 1/2 cups rolled oats
  • 1 cup cashew milk
  • 1/2 cup vanilla Greek yogurt (coconut yogurt or regular yogurt work too!)
  • 2 tbsp chia seeds
  • 1 tbsp maple syrup

Apple Cinnamon Crisp Topping

  • 1 apple, cut into small cubes
  • 1 tbsp maple syrup
  • 1/4 tsp cinnamon

Instructions

  1. Mix all overnight oats ingredients in a bowl. Cover and place in refrigerator overnight.
  2. In the morning, place apple cinnamon crisp toppings in a bowl and microwave for 45-60 seconds. Alternatively, you can sauté ingredients in a pan over medium heat for about 8 minutes or until apples have softened.
  3. Portion out overnight oats into 3 containers and top with warm soft apples*. Add additional toppings like pecans and hemp seeds (optional).

Notes

*I recommend storing the apple mixture separately that way you can reheat it and top it on the overnight oats when ready to eat. That way it’s nice and warm!
