Banana Chocolate Chip Protein Muffins

Description

Easy-to-make Banana Chocolate Chip Protein Muffins are a delicious snack, dessert or grab-and-go breakfast. 


Ingredients

Scale
  • 1 1/2 cups spelt flour
  • 1/2 cup chocolate protein powder
  • 1/2 cup coconut sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 ripe bananas (about 1 cup mashed)
  • 2 eggs
  • 1/4 cup honey
  • 1/4 cup almond milk, unsweetened
  • 2 tbsp butter, melted
  • 1/2 cup dark chocolate chips and more for topping

Instructions

  1. Preheat oven to 350 degrees F and line muffin tin with parchment paper liners.
  2. In a large bowl, whisk together spelt flour, protein powder, coconut sugar, baking powder, baking soda. Set aside.
  3. In a smaller bowl, mash bananas (use fork or potato masher). Then whisk in eggs. Add honey, almond milk and melted butter. Whisk until well blended.
  4. Add liquid mixture to the dry ingredients and mix (but do not over mix). Fold in chocolate chips.
  5. Divide batter evenly into 12 muffin cups using a muffin scoop. Bake for 17 minutes.
  6. Remove muffin tin from oven and let sit for 5 minutes. Remove muffins and let cool completely on cooling rack.
