Easy-to-make Banana Chocolate Chip Protein Muffins are a delicious snack, dessert or grab-and-go breakfast.

- 1 1/2 cups spelt flour
- 1/2 cup chocolate protein powder
- 1/2 cup coconut sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 2 ripe bananas (about 1 cup mashed)
- 2 eggs
- 1/4 cup honey
- 1/4 cup almond milk, unsweetened
- 2 tbsp butter, melted
- 1/2 cup dark chocolate chips and more for topping
Instructions
- Preheat oven to 350 degrees F and line muffin tin with parchment paper liners.
- In a large bowl, whisk together spelt flour, protein powder, coconut sugar, baking powder, baking soda. Set aside.
- In a smaller bowl, mash bananas (use fork or potato masher). Then whisk in eggs. Add honey, almond milk and melted butter. Whisk until well blended.
- Add liquid mixture to the dry ingredients and mix (but do not over mix). Fold in chocolate chips.
- Divide batter evenly into 12 muffin cups using a muffin scoop. Bake for 17 minutes.
- Remove muffin tin from oven and let sit for 5 minutes. Remove muffins and let cool completely on cooling rack.
