I have really been enjoying my instant pot lately, and this recipe has been a go-to lunch of mine! This Instant Pot Chicken Lettuce Wraps recipe is so easy, pop chicken in the instant pot and prep the remaining ingredients in the meantime. These lettuce wraps taste super delicious with a homemade Creamy Chipotle Sauce. So easy, simply add all the sauce ingredients to a blender and its ready!

Instant Pot Chicken
Cooking chicken in the instant pot is super easy. Place trivet inside pot, then add 1 cup of water, chicken, and any spices. Set pressure valve to sealing position, select Pressure Cook on high for 10 minutes.
Once it’s done, leave it for 5 minutes (natural release) then turn pressure valve to venting position. Make sure it’s fully cooked, then shred chicken with knife and fork while still warm. You can also use a hand held mixer to shred the chicken.
If chicken is frozen, follow the same steps but cook on high for about 15 minutes. Also, make sure chicken breasts are not frozen together (separate them before cooking).
Time will vary depending on the size of your chicken breast but this is typically what works for me!
Lettuce Wraps
Feel free to swap with any fresh vegetables you have!
- Butter lettuce (the base of the recipe, you can also use regular lettuce)
- Tomato
- Red onion
- Cabbage
- Fresh cilantro
- Lime juice
Creamy Chipotle Sauce Ingredients
Simple ingredients you may already have! Throw them in a blender and its ready to go!
- Plain greek yogurt
- Mayo just a little bit! ;)
- Chipotle peppers in adobe sauce
- Olive oil
- Garlic powder
- Salt

- Prep chicken ahead of time and store shredded chicken in airtight container in the fridge for 3 days.

Ingredients
Chicken
- 2 chicken breast
- 1 cup water
- Pinch of salt and pepper
Lettuce Wraps
- 6 butter lettuce
- 2 tomato, diced small
- 1/4 cup red onion, sliced
- 1/4 cup cabbage, shredded
- 2 tbsp fresh cilantro, chopped
- 1 lime juice
Creamy Chipotle Sauce
- 1 cup plain greek yogurt
- 1/4 cup mayo
- 2 chipotle peppers in adobe sauce
- 1 tsp olive oil
- 1/8 tsp garlic powder
- Pinch of salt
Instructions
- Place chicken ingredients in instant pot and set pressure cooker to high and cook for 10 minutes. Release valve after 5 minutes and ensure chicken is fully cooked. Shred chicken with knife and fork while chicken is still warm. Time will vary depending on size of chicken. Also, if chicken is frozen, cook for longer.
- Add chipotle sauce ingredients to high speed blender and blend until creamy.
- Putting it together: Top each butter lettuce with shredded chicken, tomatoes, red onion, cabbage, cilantro and about 1-2 tbsp of the chipotle sauce. Optional, top with lime juice.
