Chicken
- 2 chicken breast
- 1 cup water
- Pinch of salt and pepper
Lettuce Wraps
- 6 butter lettuce
- 2 tomato, diced small
- 1/4 cup red onion, sliced
- 1/4 cup cabbage, shredded
- 2 tbsp fresh cilantro, chopped
- 1 lime juice
Creamy Chipotle Sauce
- 1 cup plain greek yogurt
- 1/4 cup mayo
- 2 chipotle peppers in adobe sauce
- 1 tsp olive oil
- 1/8 tsp garlic powder
- Pinch of salt
Instructions
- Place chicken ingredients in instant pot and set pressure cooker to high and cook for 10 minutes. Release valve after 5 minutes and ensure chicken is fully cooked. Shred chicken with knife and fork while chicken is still warm. Time will vary depending on size of chicken. Also, if chicken is frozen, cook for longer.
- Add chipotle sauce ingredients to high speed blender and blend until creamy.
- Putting it together: Top each butter lettuce with shredded chicken, tomatoes, red onion, cabbage, cilantro and about 1-2 tbsp of the chipotle sauce. Optional, top with lime juice.
