Cauliflower Chicken Fried Rice

Description

This isn’t your typical fried rice recipe – fully loaded with cauliflower, bone broth, chicken, edamame beans and more!


Ingredients

1 medium size cauliflower

2 tbsp olive oil

1 garlic clove, minced

1/2 onion, chopped

2 chicken breasts, chopped into 1 inch pieces

1 large carrot, diced

1/2 cup mushrooms, sliced

1/2 cup frozen edamame beans

2 tbsp bone broth

2 eggs, beatened

3 tablespoons low sodium soy sauce

Garnish with pea shoots


Instructions

  1. Cut cauliflower into small pieces and add to blender. Blend for 30-60 seconds, or until cauliflower looks like rice. Add 1 tbsp of water to help with blending if needed.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and onion and stir until fragrant (about 2 minutes). Add chicken pieces and cook for 10 minutes.
  3. Add the carrots, mushrooms and edamame, and stir-fry until vegetables are tender and chicken is cooked (no pink on the inside). Approximately 10 minutes.
  4. Mix in cauliflower rice and bone broth. Then add eggs and soy sauce.
  5. Garnish with pea shoots
