This isn’t your standard fried rice recipe.
But in the BEST way. Yeah, we’ve added and swapped some standard fried rice ingredients to include:
Cauliflower rice✔
Bone broth✔ (uh what? yeah, we’ll chat about this)
Mushrooms✔ – honestly one of my fav veggies, I had too!
and Edamame beans!✔
Making cauliflower rice is super easy- simply add cauliflower to a blender and blend for about 30 seconds to 1 minute until a rice consistency is reached. A lot of grocery stores also sell pre-made cauliflower rice to make it even easier. If you are hesitant in trying cauliflower rice, I would suggest trying this recipe with half regular rice/half cauliflower rice. The texture is very similar to regular rice and in this particular recipe, you don’t even really taste the cauliflower as it is overpowered by the other ingredients.
This recipe is also loaded with protein, from the chicken, eggs, edamame beans and bone broth. It is a great post-workout meal or great to make anytime you want something filling and protein packed.
So what is Bone Broth?
Bone broth is made from animal bone and connective tissue (chicken, beef or fish) that has been boiled then simmered. Bone broth comes in powder or liquid form. The brand I use (below) does not have a taste, which makes it convenient to add to juices, hot/cold water, smoothies, soups, etc.
Bones and connective tissue contain amino acids (protein building blocks), collagen and gelatin. Consuming bone broth helps our:
- Gut health/digestive tract
- Joint and bone health
- Skin health
In this particular recipe, I used Prairie Naturals Chicken Bone Broth, which I would recommend if you’re in the market for bone broth.

Description
This isn’t your typical fried rice recipe – fully loaded with cauliflower, bone broth, chicken, edamame beans and more!
Ingredients
1 medium size cauliflower
2 tbsp olive oil
1 garlic clove, minced
1/2 onion, chopped
2 chicken breasts, chopped into 1 inch pieces
1 large carrot, diced
1/2 cup mushrooms, sliced
1/2 cup frozen edamame beans
2 tbsp bone broth
2 eggs, beatened
3 tablespoons low sodium soy sauce
Garnish with pea shoots
Instructions
- Cut cauliflower into small pieces and add to blender. Blend for 30-60 seconds, or until cauliflower looks like rice. Add 1 tbsp of water to help with blending if needed.
- In a large skillet, heat olive oil over medium heat. Add garlic and onion and stir until fragrant (about 2 minutes). Add chicken pieces and cook for 10 minutes.
- Add the carrots, mushrooms and edamame, and stir-fry until vegetables are tender and chicken is cooked (no pink on the inside). Approximately 10 minutes.
- Mix in cauliflower rice and bone broth. Then add eggs and soy sauce.
- Garnish with pea shoots
