Classic Kale & Chickpea Salad with Red Wine Vinegar Dressing recipe! Easy and loaded with protein!


Ingredients

Scale
  • 1 cup quinoa (I used rainbow quinoa)
  • 2 cups vegetable broth
  • 2 cups kale, chopped
  • 1/2 cup carrots, cut julienned
  • 1 tomato, chopped
  • 1/4 cup zucchini, chopped
  • 1 cup chickpeas
  • 1/4 cup cilantro, chopped
  • 1/4 cup parsley, chopped
  • Red Wine Vinegar Dressing
  • 3 tbsp red wine vinegar
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp lemon juice
  • Pinch of salt

Instructions

  1. Begin by bringing quinoa and vegetable broth to a boil. Them lower to a simmer and cover for about 20 minutes.
  2. In the meantime, add all salad ingredients (except dressing) to a large bowl.
  3. In a small container with a lid, add all dressing ingredients and give it a good shake.
  4. When quinoa is done, add it to the other ingredients and then top with dressing and gently combine everything.
  5. Enjoy!
