Description

Dark Chocolate Peanut Butter Cups are a delicious dessert – they are also easy to make with minimal ingredients.
Recipe is vegan, dairy-free and gluten-free.


Ingredients

Base

  • 1 cup natural smooth peanut butter
  • 2 tbsp coconut oil, melted
  • 1 tbsp maple syrup

Dark Chocolate topping

  • 1/3 cup coconut oil
  • 1/4 cup chopped dark chocolate
  • 1/2 cup cocoa powder
  • 1 tbsp maple syrup

Instructions

  • Add all base ingredients to medium size bowl and mix together. 
  • Line a regular 12 cup muffin tin with muffin liners. Add about 1 tbsp of the base mixture to each muffin liner. Smooth out the top. Place in freezer for about 1 hour so the base can firm.
  • Melt coconut oil and dark chocolate in microwave or using a double-boiler. Then mix in cocoa powder and maple syrup. Remove muffin tin from freezer and top chocolate mixture onto the base. Place muffin tin back into freezer until chocolate firms (about 20 minutes). 

Notes

  • Store in airtight container in the freezer. Remove from freezer about 5 minutes before eating to soften a bit.
