Description
This easy instant pot risotto recipe is a rich and creamy side dish. Made with arborio rice, Parmesan cheese and a few other simple ingredients. This dish compliments many meat and fish dishes.

- 3 tbsp butter
- 1 yellow onion, chopped
- 2 garlic cloves, chopped
- 1 1/2 arborio rice
- 3 cups vegetable broth
- 1/2 tsp salt
- 1/8 tsp black pepper
- 3/4 cup frozen peas
- 1/2 cup freshly grated Parmigiano-Reggiano
Instructions
- Press the sauté button on the Instant Pot and melt the butter in the pot. Add onion and garlic and sauté for about 3 minutes. Press the cancel button.
- Mix in the rice, broth, salt and pepper. Close and lock the lid. Set the steam-release switch to sealing. Set cooking time to 6 minutes at high/normal pressure.
- Release pressure using manufacture’s quick-release. Open lid and stir in peas and cheese. Let stand for 2 minutes.
- Garnish with black pepper and fresh herbs.
