- 1 lbs baby potatoes, sliced in half
- 0.5 lbs Brussels sprouts, sliced in half (if large)
- 5 medium sized carrots, peeled and cut
- 1 yellow onion, sliced
- 1/4 tsp salt
- 1/4 tsp black pepper
Garlic Butter Ingredients
- 3 tbsp butter, melted in microwave
- 3 garlic cloves, chopped
- 1 tbsp fresh parsley, chopped
- 1 tbsp fresh rosemary
Instructions
- Preheat oven to 400 degrees F and line an extra large baking sheet with parchment paper.
- In a large bowl add baby potatoes, Brussels sprouts, carrots and onion.
- In a small bowl, mix all garlic butter ingredients. Pour over vegetables and toss.
- Place vegetable mixture on prepared baking sheet. Spread out as much as possible (use 2 separate baking sheets if overcrowding). Season with salt and pepper.
- Bake for 30 minutes, tossing halfway.
