Roasted Vegetable Medley [Bussels Sprouts, Potato, Carrot, Onion]

Ingredients

  • 1 lbs baby potatoes, sliced in half
  • 0.5 lbs Brussels sprouts, sliced in half (if large)
  • 5 medium sized carrots, peeled and cut
  • 1 yellow onion, sliced
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Garlic Butter Ingredients

  • 3 tbsp butter, melted in microwave
  • 3 garlic cloves, chopped
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh rosemary

Instructions

  1. Preheat oven to 400 degrees F and line an extra large baking sheet with parchment paper.
  2. In a large bowl add baby potatoes, Brussels sprouts, carrots and onion.
  3. In a small bowl, mix all garlic butter ingredients. Pour over vegetables and toss.
  4. Place vegetable mixture on prepared baking sheet. Spread out as much as possible (use 2 separate baking sheets if overcrowding). Season with salt and pepper.
  5. Bake for 30 minutes, tossing halfway.
