Happy Tuesday everyone! Today I am sharing a really easy and delicious Valentine’s Day treat that you can make for your friends, family or your love! Valentine’s Day is normally associated with lots of chocolates, sweet treats and more but making healthy treats can be just as delicious! These mini cakes are sweet, crunchy and allow you to be creative with your toppings. You can also change up the shape of the cake or make one big cake if you wanted.
These cakes are perfect to make with kids as they require no baking and minimal ingredients {and they can get creative with their toppings!}.

Description
Healthy dessert perfect for Valentine’s Day or any occasion! They require no baking and are very versatile!
Ingredients
- Dough
- 2/3 cup of Dates, pitted (cut in quarters)
- 1/4 cup of Oats
- 1 tbsp Peanut butter, raw
- 1 tbsp Coconut oil, melted
- 2 tsp Honey
- Icing
- 1 cup Non Fat Greek Yogurt
- 2 tsp Honey
- 2 Strawberries (optional)
- Toppings
- Blueberries
- Strawberries
- Chocolate Chips
- Anything- get creative!
Instructions
- Place dough ingredients in food processor and pulse until dates are finely chopped and everything is mixed
- Place the dough on a cutting board and using your hands press it down to make a flat, 1/2 inch surface
- Use a heart shaped cookie cutter to make heart shapes. Make sure to press firmly on dough when in cookie cutter to ensure the dough is sticking together. Using a small heart shaped baking pan (found at the dollar store) works great too for creating heart shapes
- Line a shallow container with parchment paper and place the heart shaped dough on it
- Place container in fridge for 10-15 minutes so the dough can settle (this will also help everything stick together
- In the meantime, simply combine greek yogurt and honey in a bowl and top over dough when ready to eat (for white icing)
- For the pink icing: Dice 2 strawberries and add to blender along with honey and 1/2 cup greek yogurt. Once strawberries are blended you should get a liquid pink colour. Add the other 1/2 cup of greek yogurt and stir (this will thicken it back up while keeping the pink colour). Top over dough
- Once you’ve iced the dough, top with blueberries, strawberries, chocolate chips etc.!
