I went to the farmers market on the weekend and stocked up on many fruits and veggies. When I got home I was so hungry and wanted to make a huge salad with a variety of things I had just purchased. The combination of ingredients isn’t what you may see in a typical salad, so I wanted to share with you this salad bowl! I like to call it a “power bowl” because it is loaded with nutrients. Kale, brussel sprouts and blueberries are such nutrient rich foods and can all be found in this salad. Blueberries aren’t something I normally add into my salads but it totally works with these ingredients and I can already tell it’s going to be my new favorite summer salad. For protein, I added tofu with some seasoning from Mrs. Dash. Another one of my favorite combos is salad and french fries so of course I paired this salad with my Herb & Garlic French Fry recipe.

Super easy power bowl that will leave you feeling nourished & fuelled for the rest of the day!
Ingredients
- Salad
- 1/2 cup tofu
- 1 cup kale, chopped
- 4 cherry tomatoes, chopped
- 1 bell pepper, finely chopped
- 2–3 brussel sprouts, sliced
- Handful of blueberries
- Juice from half a lemon
- 1 tbsp olive oil
- 1 tsp Mrs. Dash Original Seasoning
- Herb & Garlic French Fries
- 1/2 russet potato, thinly sliced
- 1 tsp olive oil
- 1 tsp Mrs. Dash Herb & Garlic Seasoning
Instructions
- Salad
- Begin by cooking tofu on a skillet with olive oil. Once it has been cooking for 5 minutes, sprinkle with seasoning.
- In the meantime, chop veggies {kale, cherry tomatoes, bell pepper} and add to a bowl with a handful of blueberries.
- By this time I like to throw in the brussel spouts to the hot skillet {with the tofu} for them to soften.
- Once tofu has browned on the edges remove from heat and top over salad along with the brussel sprouts.
- Drizzle with lemon juice.
- Herb & Garlic French Fries
- Preheat oven 350F degrees.
- Wash and slice potato into small french fries or wedges.
- Add sliced potatoes olive oil and seasoning to plastic bag and give it a good shake.
- Lay potatoes on a baking sheet with parchment paper being sure potatoes are not touching each other.
- Bake for 15 minutes then flip them on the other side for another 10-15 minutes.
- Remove from oven and enjoy!
