Hi everyone! Today I am sharing another What I ate Wednesday! I haven’t shared one of these posts in awhile so if you’re new, head over to Peas and Crayons blog to link up your post or find other food bloggers.
Breakfast
On the weekend I purchased these blueberries from the farmers market and they are absolutely delicious! Fruit is my favorite thing to eat in the mornings with a bit of non fat greek yogurt. I didn’t have a photo of that so here is a photo of the fresh blueberries!
Lunch
For lunch I had a staple of mine- quinoa, tofu and vegetables. This is a good meal that tastes great as leftovers so I am always doubling or tripling the recipe when I make it.
Dinner
For dinner I warmed up a veggie burger, made my Herb & Garlic French Fries and also had a side kale salad. This meal can easily be made in under 30 minutes! Veggie burger & salad are also great leftovers!
Dessert
I recently revamped my Dark Chocolate Peanut Butter Cups and have really been enjoying these lately. I shared the recipe in this post but there is also a video below showing you exactly how I make them!
