It has been SO hot lately, so I think we all get a pass on eating popsicles for breakfast😝
But seriously, these parfait popsicles are all over the internet because they are creamy, sweet and super refreshing. I knew I had to make my own version of these babies! Regular yogurt is a lot easier to work with compared to Greek yogurt, which is thicker. If using Greek yogurt, add a bit of water to thin it out before adding it to the popsicle mold. I also added frozen blueberries and pomegranate seeds, then topped it off with Vegnola (veggie infused granola!).

I recently met up with Dav from Good People Foods (formally Fauxnola if you’re familiar with that brand). She was so sweet and I had a great time chatting with her about her line of Vegnola products. Vegnola is veggie infused granola that contains good and simple ingredients. No refined sugar, no artificial colours, low in salt and vegan. Blueberry Pomegranate Breakfast Popsicles
- Total Time: 6+ Hours

Description
Refreshing homemade popsicles inspired by our favourite breakfast food – parfaits! Fresh berries, creamy yogurt and crunchy granola to top it off. The perfect summer breakfast! Also makes a great sweet dessert.
Ingredients
2 cups plain yogurt (regular or dairy-free)
1/4 cup blueberries (fresh or frozen)
1/4 cup pomegranate seeds(fresh or frozen)
1/4 cup granola (I used Vegnola)
Instructions
- Add yogurt, blueberries and pomegranate seeds to popsicle molds – but leave 1/2 inch available at the top of the mold (for the granola).
- Top with your favourite granola and slowly place the popsicle sticks into the mold.*
- Place popsicles into freezer overnight.
- When ready to eat, run mold until warm water and popsicles should slide right out.
Notes
*Putting the popsicle sticks into the mold might push some of the granola down into the yogurt, so top with more granola if needed.
